We received the following email in late April 2017 from one of our students who began in September of 2016:

Subject: Sharing an amazing experience

Drs. Rick and Karin,

I had the most amazing experience yesterday evening and today.  I am in Monaco on business and I had a meeting with 4 business people. It started yesterday evening as I started my diatribe about nutrition! I started in reaction to a comment over dinner from one woman who referred to the fact that her husband ate lots of eggs and meat because he is a body builder. I did not recall the name of the vegan body builder but I assured her that they existed (and I will send her the link).

Then I went on about how the body only needs the daily requirement of protein and the balance will be converted to energy (via glucose) or stored as fat and how the fat is also used for energy!  I assured her that carbohydrates, the preferred source of energy, could also be relied upon as the energy source to build muscle.  Then I turned to the balance between Omega 3's and 6's and the inflammatory effects of Omega 6's.  Then I moved on to cholesterol and why we do not need it and how our liver produces it in the production of bile being clear on how it is needed to emulsify fat - even the fats we get from eating vegetables - with a special comment about the Omega 3's in leafy greens!

The next morning at another meeting they wanted more and after explaining in some detail how the wrong mix of fat makes the structure of cells stiff and rigid, resulting in resistance for hormones, insulin and serotonin (and the further consequences of each) and how too many Omega 6's causes inflammation in our bodies resulting in various disease processes.  I went on to calorie restriction overall and why overeating is bad, having too many free radicals and not enough anti-oxidants is bad and why a meat and egg diet is deficient in vitamins, phytonutrients and fiber. We talked about satiety and I shared how excess weight can cause dysfunctions in the hormones controlling satiety.  I was on a roll and everyone in the meeting listened with pure fascination.  I must admit I was also listening to myself with pure fascination!  

They were all just like I was before I started the course.  They did not know even the fundamentals of nutrition.  How is it possible that so many well-educated people know so little about nutrition?  Knowledge is power and I felt totally empowered today.

Who attends our classes? Our students include people who are interested in healthful eating, nutrition and health care professionals, and many others. Our courses are based on peer-reviewed research but are designed to be understandable for people with little or no scientific or nutrition background. People with a nutrition or health care background appreciate the scientific basis of the information presented. In short, people from all educational backgrounds have attended and enjoyed our courses! We also have many international students.

Do we just talk about raw food nutrition in our classes? As our curriculum continues to build upon previous material, we talk about raw food nutrition as well as many other approaches to healthy eating. We make sense of why different approaches work in different circumstances and empower our students with information to help them make choices that are best for them. Many of our students have said that they really appreciate our balanced, non-dogmatic, and non-judgmental approach to health and nutrition.
